Stuart Barber – Chef

Stuart Barber hails from Norfolk and has a long history in several of England’s best restaurants. At Hermetikken, Stuart is the head chef, and the food served reflects his culinary philosophy. Stuart and his team received their first MICHELIN star in 2024.

Menu and wine

The menu is based on local, seasonal ingredients and the finest produce available. The preparation and techniques in the kitchen aim to enhance the unique characteristics and qualities of the ingredients. Wine is also dear to the restaurant’s heart, and the wines they serve are crafted by people who truly care. Emphasis is placed on quality, individuality, class and drinkability, and the wine menu complements the flavours on the plate. The menu is available both when you book a table, or if you reserve one of the spots right by the chefs at the kitchen counter.

The restaurant likes to call their seasonal menu OMA(K)ASE, which loosely translates to “let us take care of it.” The menu is composed of the best local ingredients available at any given time. It usually consists of four snacks, followed by dishes based on shellfish, seafood, fish and meat, and the meal concludes with dessert and petit fours.
